  • 2 pints cherry tomatoes approximately 5 cups
  • ½ red onion thinly sliced
  • 2 tablespoon fresh basil leaves
  • 1 tablespoon fresh oregano leaves
  • 3 cloves garlic smashed and chopped
  • 2 tablespoon olive oil
  • ¼ teaspoon coarse sea salt
  • ¼ teaspoon black pepper

Instructions

 

  • Preheat oven to 425°F (220°C).
  • Place cherry tomatoes, thinly sliced red onion, fresh herbs (basil and oregano), and smashed and chopped garlic on a large rimmed baking sheet.
  • Drizzle generously with olive oil, then sprinkle evenly with coarse sea salt and black pepper. Toss well to ensure all ingredients are coated.
  • Roast for 15 minutes. Carefully remove from the oven, toss the ingredients, and return to the oven for another 10 minutes, or until the tomatoes are nicely blistered and some have burst, releasing their juices.
  • Let cool slightly, then transfer the roasted tomatoes and all their flavorful juices to a serving bowl. If desired, crush a few of the tomatoes with the back of a spoon against the side of the bowl to create a saucier consistency.
  • Serve warm or at room temperature. Enjoy!
  • Store any leftover roasted tomatoes in an airtight container in the refrigerator for up to 5 days. For best flavor, bring them back to room temperature before serving.
