  • ¼ cup raw sliced almonds
  • 2 Tablespoons nutritional yeast

Instructions

 

  • Preheat oven to 450°F (232°C). Line a large rimmed baking sheet with unbleached parchment paper.
  • PREPARE BROCCOLI: Wash the broccoli thoroughly. Using a paring knife, trim and peel off the tough, woody outer layer of the broccoli stems; discard this outer layer. Cut the remaining tender stalks into ¼-inch rounds. Then, slice or break apart the crowns into bite-sized florets. The stem rounds will roast up beautifully and be just as delicious as the florets. (Alternatively, you can save the stalks to make into “rice” or add to other recipes). Place all trimmed broccoli pieces into a large bowl.
  • In a small separate bowl, whisk together the avocado oil (or chosen high-heat oil), lemon zest and juice, freshly pressed garlic, sea salt, onion powder, dried parsley, dried dill, and crushed red pepper flakes (if using). Pour this flavorful dressing over the broccoli in the large bowl and mix very well, ensuring all pieces are evenly coated with the oil and spice mixture.
  • Spread the marinated broccoli onto the prepared baking pan in a single, even layer. If your pan is not large enough to hold all the broccoli in one layer, use a second large baking sheet and divide the broccoli amongst the two pans. This prevents steaming and ensures maximum crispiness.
  • Roast the broccoli in the hot oven for 10 minutes. After 10 minutes, remove the pan from the oven, sprinkle the sliced almonds over the broccoli, and toss everything gently. Return the broccoli to the oven and roast for another 5-10 minutes, or until the broccoli is crisp, golden brown, and tender, but the nuts are not burnt.
