Continue to process the mixture for 2-3 minutes, or until the mixture begins to form a large ball and pulls away from the sides of the food processor. Taste the mixture and, if desired, add the optional maple syrup for extra sweetness, processing briefly until fully incorporated.
  • Prepare a small, shallow plate or bowl with the combined mixture of hemp seeds and flakey sea salt for coating. Alternatively, you can put this coating mixture into a small zip-top bag.
  • Transfer the brownie dough from the food processor onto a clean counter surface or another plate.
  • Using your hands, roll the mixture into small, uniform balls, approximately 1.5 inches in diameter. You should be able to make about 18 delicious bites. For more uniform sizing, use a small cookie scoop to portion the dough before rolling.
