  • Preheat oven to 425°F (220°C) and line a large rimmed baking sheet with unbleached parchment paper for easy cleanup.
  • Prepare Vegetables: Cut the red onion in half through the root, then thinly slice it. Scrub the sweet potatoes (leaving the skin on for extra nutrients and texture), cut them lengthwise, then into ¼-inch rounds or small dice. Trim the fennel bulb, cut it in half, then thinly slice. Mince the garlic cloves.
  • First Roast: Lay the sliced onions, diced sweet potatoes, and sliced fennel onto the prepared baking sheet. Drizzle with olive oil and sprinkle with sea salt, cumin, and thyme. Toss everything gently to coat evenly. Roast in the preheated oven for 10 minutes.

    Second Roast: Remove the sheet pan from the oven, stir the vegetables, and then add the minced garlic. Stir again to distribute the garlic. Return to the oven and roast for another 10 minutes.

  • Prepare Kale: While the veggies are roasting, wash and thoroughly pat dry the green curly kale. Remove the tough inner stems and roughly chop the leaves into bite-sized pieces.
  • Add Kale & Eggs: After the second roast, remove the sheet pan from the oven. Toss the chopped kale into the hot cooked vegetables; the residual heat will quickly wilt it. Once the kale is tender-crisp, use the back of a spoon to create 6 small wells or spaces in the hash mixture. Carefully crack one large egg into each hole. Sprinkle the eggs with a little extra sea salt and a pinch of crushed red pepper flakes, if desired.
