  • 3 large eggs
  • ½ cup water
  • ½ cup fresh lemon juice (freshly squeezed from about 2 lemons)
  • ½ cup unsweetened applesauce
  • ½ cup honey (local and raw is best for added benefits)
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or frozen blueberries (dust with about 1 tablespoon of ground oats before adding to batter to prevent bleeding and sinking.)

Instructions

 

  • Prepare Cashews: Begin by soaking the raw cashews in filtered water for a minimum of one hour. For the creamiest result, soaking them overnight is ideal. This step is crucial for achieving a smooth, dairy-free base.
  • Preheat Oven & Prepare Muffin Tins: Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with non-bleached parchment liners, or generously grease each muffin well to ensure easy removal.
  • Prepare Dry Ingredients: In a high-speed blender or food processor, grind the old-fashioned rolled oats until they transform into a very fine, flour-like powder. Transfer this oat flour to a large mixing bowl. Add the sea salt, baking powder, baking soda, poppy seeds, and the vibrant fresh lemon zest. Whisk these dry ingredients together thoroughly and set aside.
  • Prepare Wet Ingredients (Part 1 – Cashew Base): Drain and thoroughly rinse the soaked cashews. Place the rinsed cashews into your clean blender along with the ½ cup of water and ½ cup of fresh lemon juice. Process until the mixture is exceptionally creamy and smooth, pausing to scrape down the sides of the blender jar as needed to ensure no lumps remain.

Gently stir with a spatula until the wet and dry ingredients are just combined. Remember, a few lumps are fine – avoid overmixing for a tender muffin. In a separate small bowl, gently toss the fresh or frozen blueberries with about 1 tablespoon of the ground oat flour (taken from your initial dry mix). This step helps prevent the blueberries from sinking to the bottom during baking. Carefully fold the dusted blueberries into the muffin batter.
  • Bake: Divide the muffin batter evenly among the prepared 12 muffin tins. These gluten-free muffins will not rise dramatically, so feel free to fill the tins almost to the top. Bake for 25 minutes, or until a wooden toothpick inserted into the center of a muffin comes out clean, indicating they are fully cooked.
  • Cool & Serve: Allow the baked muffins to cool in the muffin tin for approximately 5-10 minutes. This helps them set and prevents crumbling. Then, carefully transfer them to a wire rack to cool completely. These muffins are absolutely delightful served warm or at room temperature!
