Ingredients

  

  • 1 cup plain Greek yogurt
  • 2 cups blueberries
  • ¼ cup sliced almonds
  • ¼ cup shredded coconut, sweetened or unsweetened

Instructions

 

  • In a small mixing bowl, combine the Greek yogurt, blueberries, almonds, coconut, vanilla, honey and optional protein powder in a bowl. Gently mix together so the blueberries aren’t smashed.
  • Use a 1.5 Tablespoon cookie scoop to scoop portions onto a baking sheet lined with parchment paper.

    Freeze for at least 4 hours until frozen through and no longer runny.

  • Melt the chocolate chips and coconut oil together in a microwave safe bowl for 30 second increments and stir in between until the chocolate is smooth.
  • Drizzle the melted chocolate over the frozen yogurt bites and cover as much as possible. Freeze for another 10-15 minutes until the chocolate is hardened.
  • Optionally sprinkle with coconut or almond shavings before serving.
