Even as I prepared this very post and my husband caught sight of the enticing photos, he immediately requested it for breakfast the following morning. This Smashed Avocado Poached Egg Toast is, without exaggeration, that exceptionally good.

It’s a dish that not only looks stunning on your plate but also provides sustained energy and essential nutrients to fuel your day.
Mastering the Poached Egg: A Guide to Perfect Runny Yolks
While this dish might make a grand impression, its preparation is surprisingly straightforward. The most common apprehension usually centers around poaching eggs. If you’ve never tried it, the technique might seem a little daunting at first glance, but I assure you, it’s far less challenging than it appears. With a few simple tricks and a bit of patience, you’ll be creating perfectly poached eggs every time. The key is understanding the science behind it and practicing gentle handling.
Tips for Flawless Poaching:
- The Vinegar Secret: Always add a tablespoon of white vinegar to your boiling water. Vinegar helps the egg whites coagulate more quickly, preventing them from spreading out and creating those undesirable “wisps.” Don’t worry, a small amount won’t impart any noticeable flavor to your eggs.
- Freshness Matters: The fresher your eggs, the better they will poach. Fresh eggs have tighter whites that hold their shape more effectively, leading to a more compact and aesthetically pleasing poached egg.
- Gentle Simmer, Not a Rolling Boil: Bring a pot of water to a gentle simmer, not a vigorous boil. A soft simmer will cook the eggs evenly without violently disturbing their delicate structure. The water should have small bubbles rising, but it shouldn’t be churning.
- Individual Bowls are Key: Crack each egg into a separate small bowl or ramekin before adding it to the water. This allows you to inspect the egg for shell fragments and, more importantly, to gently slide it into the water without breaking the yolk or causing the white to spread excessively.
- Slow and Steady Wins the Race: Gently slide each egg, one at a time, into the simmering water. Avoid dropping them in, as this can break the yolk.
- Prevent Sticking: Once all your eggs are in the water, take a wooden spoon and very gently stir the water around the eggs. This subtle movement helps ensure the eggs don’t stick to the bottom of the pot and encourages a more even cooking. It’s perfectly normal for some wispy bits of egg white to float around and detach; this is a natural part of the poaching process and doesn’t affect the final result of your beautiful egg.
- Timing is Everything: Do not overcook your poached eggs, especially if you desire that luscious, runny yolk. They should typically be in the water for no more than 3 minutes for a soft, runny yolk. If you prefer a slightly firmer yolk, you can extend the cooking time by another 30 seconds to a minute. Keep a close eye on them!
- Drain and Dry: Once cooked to your preference, carefully remove the eggs from the water using a slotted spoon. Gently place them on a plate lined with paper towels. This step is crucial for absorbing excess water, preventing your toast from becoming soggy.
And there you have it! With these pointers, you’ll achieve stunning, perfectly poached eggs every time. Once they’re ready, simply place them onto your smashed avocado toast, and voilà – a stunning and delicious breakfast awaits!
Crafting the Perfect Smashed Avocado: Creamy, Flavorful, and Fresh
The foundation of an exquisite avocado toast lies in the quality and preparation of the smashed avocado itself. It’s more than just mashing; it’s about building a balanced flavor profile and achieving the perfect creamy texture. Here’s how to create a smashed avocado that truly shines:
Selecting the Right Avocado:
Always start with ripe avocados. A ripe avocado will yield slightly to gentle pressure when squeezed, but it won’t feel mushy. Its skin will typically be dark green or almost black, depending on the variety.
The Smashing Technique:
- Prepare the Avocado: Carefully cut the avocado in half lengthwise around the large pit. Twist the two halves to separate them. Remove the pit by gently tapping it with the blade of your knife and twisting it out, or by scooping it out with a spoon.
- Score the Flesh: Using a knife, gently score the avocado flesh directly in its skin, creating a grid pattern (vertical and horizontal lines). Be careful not to cut through the skin.
- Scoop into a Bowl: With a spoon, run it along the inner side of the avocado skin, scooping out the diced flesh into a mixing bowl. This technique ensures you get all the creamy goodness out cleanly.
Building the Flavor Profile:
Once your avocado is in the bowl, it’s time to add the magical ingredients that elevate it from plain avocado to a gourmet smash:
- Feta Cheese: The addition of feta cheese provides a delightful salty tang and a crumbly texture that contrasts beautifully with the creamy avocado. It introduces a Mediterranean twist that brightens the entire flavor profile.
- Greek Yogurt: A small amount of Greek yogurt adds an incredible creaminess and a subtle tanginess without overpowering the avocado. It also helps achieve a smoother, more spreadable consistency. If you don’t have Greek yogurt, a tiny splash of olive oil can also contribute to creaminess.
- Lemon Juice: Fresh lemon juice is non-negotiable! It provides a crucial burst of brightness, cutting through the richness of the avocado and preventing it from browning. Its acidity awakens all the other flavors.
- Salt and Pepper: Season generously with salt and freshly cracked black pepper to taste. These basic seasonings enhance the natural flavors of the avocado and other ingredients.
Then, simply mash it all together! You can use a fork for a chunkier texture or a potato masher for a smoother consistency. The choice is yours, depending on your preference.
The Perfect Canvas: Choosing Your Toast
While the avocado and egg are the stars, the bread serves as the crucial foundation for this dish. A good quality, sturdy toast is essential to hold up to the generous toppings without becoming soggy. I highly recommend using good quality sourdough bread. Its slight tang and robust chewiness complement the richness of the avocado and egg beautifully. Other excellent choices include artisan whole-grain bread, rye bread, or even a hearty multigrain loaf. Toast your chosen bread to a golden crispness, either in a toaster, a hot pan with a drizzle of olive oil, or under the broiler.
Assembling Your Smashed Avocado Poached Egg Toast
Once your bread is perfectly toasted and your avocado is smashed, it’s time for the grand assembly. This is where your breakfast masterpiece comes together:
- Spread the Avocado: Generously spread a thick layer of the smashed avocado mixture over your toasted bread. Ensure an even coating right to the edges.
- Add a Kick (Optional): Sprinkle with some red pepper flakes for a gentle warmth and a pop of color. Adjust the amount based on your spice preference.
- Place the Poached Egg: Gently, and with care, place your perfectly poached egg (or two, depending on your appetite) directly on top of the smashed avocado.
The Finishing Touches and Serving
To truly complete this magnificent breakfast, don’t forget the accompanying elements and a final flourish:
- Cherry Tomatoes: Halved cherry or cocktail tomatoes add a burst of juicy freshness, a vibrant color contrast, and a lovely acidic counterpoint to the richness of the toast. Arrange them artfully alongside the toast.
- Drizzle of Olive Oil: A final drizzle of high-quality extra virgin olive oil enhances the flavors and adds a glossy finish.
- Salt and Pepper: A light sprinkle of flaky sea salt and freshly ground black pepper over the egg and tomatoes before serving.
Serve immediately, allowing the warmth of the egg and toast to meld with the creamy avocado. The moment you cut into the egg and watch that golden yolk cascade down is truly a sight to behold and a promise of deliciousness. And here it is: Smashed Avocado Poached Egg Toast. Doesn’t it look absolutely fabulous? And needless to say, it tastes equally as good, if not better. But you shouldn’t just take my word for it. You’ll need to try this yourself and be the judge of its undeniable appeal. Enjoy every wholesome, flavorful bite!
