  • Begin by cooking your spaghetti pasta according to the package directions until al dente. While the pasta is cooking, proceed with preparing the pepitas and the pumpkin pasta sauce in a separate medium cooking pot.
  • To prepare the pepitas, heat the medium cooking pot over low to medium heat. Add the raw pepitas and roast them evenly, stirring occasionally to prevent burning, for approximately 3-4 minutes. No oil or salt is necessary for this step. You might hear a few popping sounds as they toast, which is normal. Once golden and fragrant, remove them from the heat and transfer them to a small bowl to cool.
  • In the same medium cooking pot that you used to roast the pepitas (no need to clean it), combine the 100% pure pumpkin puree, cream cheese, chicken (or vegetable) bouillon, garlic powder, and onion powder. Mix all ingredients thoroughly, stirring constantly over low heat until the cream cheese is fully melted and the sauce is smooth and creamy.
  • When the spaghetti pasta is cooked, before draining, carefully reserve 1.5 cups of the starchy pasta water. Add this reserved pasta water into the pumpkin puree mixture, stirring well to achieve your desired sauce consistency.
