Ingredients

 



  • 1 cup cashews soaked at least 1 hour



  • 2 cups filtered water



  • 2 teaspoons fresh grated turmeric



  • 1 Tablespoon pure maple syrup



  • 1 teaspoon pure vanilla extract



  • ½ teaspoon ground cinnamon



  • ½ teaspoon sea salt



  • 4-5 grinds fresh black pepper



  • pinch ground ginger



  • ½ cup chia seeds

Instructions

 

  • Soak cashews in filtered water for a minimum of 1 hour. Drain, rinse thoroughly, and drain again.
  • Add the soaked cashews, 2 cups fresh filtered water, grated turmeric, maple syrup, vanilla extract, cinnamon, sea salt, fresh black pepper, and ground ginger to a high-speed blender. Blend on high for approximately 1 minute until completely smooth and creamy.
  • Pour the freshly blended golden milk into a medium-sized bowl. Add the chia seeds and stir vigorously to ensure they are well mixed and evenly distributed.
  • Let the mixture sit for 5 minutes, then stir again thoroughly. This second stir helps prevent chia seeds from clumping together, ensuring a smooth pudding texture.
  • Refrigerate the chia pudding for at least 3 hours, or preferably overnight, until it reaches a thick, pudding-like consistency. Enjoy!
  • This delicious Golden Chia Pudding will stay fresh and good in the refrigerator for up to one week, making it perfect for meal prep.

Notes

If you are short on time and don’t have an hour to soak cashews, you can substitute 2 cups of your preferred plant-based milk (like almond or oat milk) for the cashews and filtered water mentioned in the recipe. Then, simply proceed with the remaining steps as written.
