1 cup beer (darker beer adds richer flavor) -
¾ cup almond milk (or other plant milk) -
¼ cup maple syrup or honey -
3 Tablespoons apple cider vinegar
Instructions

Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with unbleached parchment paper.

If using wheat berries, pulverize them in a high-speed blender (like a Vitamix or Nutribullet) until they achieve a fine flour consistency. This yields approximately 2 cups of fresh whole wheat flour.

In a large mixing bowl, combine the freshly ground wheat flour (or store-bought whole wheat flour), rye flour, baking soda, and sea salt using a wooden spoon. Gradually add in the beer, almond milk, maple syrup (or honey), and apple cider vinegar. Stir until the dough comes together to form a slightly sticky ball. If the dough appears too dry, add a splash more beer; if it’s too sticky, sprinkle in a bit more flour until it’s manageable.*
