Ingredients


  • 1 ½ cups wheat berries yield approx. 2 cups flour*

  • 2 cups rye flour

  • 2 teaspoons baking soda

  • 1 teaspoon sea salt

  • 1 cup beer (darker beer adds richer flavor)

  • ¾ cup almond milk (or other plant milk)

  • ¼ cup maple syrup or honey

  • 3 Tablespoons apple cider vinegar

Instructions

  • Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with unbleached parchment paper.
  • If using wheat berries, pulverize them in a high-speed blender (like a Vitamix or Nutribullet) until they achieve a fine flour consistency. This yields approximately 2 cups of fresh whole wheat flour.
  • In a large mixing bowl, combine the freshly ground wheat flour (or store-bought whole wheat flour), rye flour, baking soda, and sea salt using a wooden spoon. Gradually add in the beer, almond milk, maple syrup (or honey), and apple cider vinegar. Stir until the dough comes together to form a slightly sticky ball. If the dough appears too dry, add a splash more beer; if it’s too sticky, sprinkle in a bit more flour until it’s manageable.*
  • Turn the dough out onto a lightly floured surface and gently knead it into a rough, round ball. Transfer the dough to your prepared baking sheet, sprinkle lightly with flour, and use a sharp knife to score a deep cross on the top.
  • Bake for 45 minutes, or until the loaf has almost doubled in size, turns a deep golden brown, and sounds hollow when tapped on the bottom.
  • Allow the bread to cool completely on a wire rack before slicing.
  • This bread is truly fantastic toasted, especially with a spread of your favorite jam or marmalade. Enjoy!

Notes

* You can use 2 cups of store-bought whole wheat flour in place of milling the wheat berries yourself if you prefer.

* The dough should be soft but not overly sticky. You should be able to touch it without large clumps sticking to your hands, but it should also hold its shape as a cohesive ball without dry bits crumbling off.

* For an extra treat, I love to pair this bread with homemade orange marmalade or chia jam.
