Use a melon baller or a small paring knife to remove the core, seeds, and stem. Decide whether to leave the skins on for a chunkier, more rustic applesauce with added fiber and color, or to peel them for a smoother consistency. If you peel, save one long strand of red apple peel to add to the pot for a natural pinkish hue. Cut each apple half into 2-3 uniform chunks.

    Prep the Lemon: Wash the outside of the lemon well. Use a vegetable peeler or paring knife to remove a thick strip of the lemon peel (avoiding too much white pith, which can be bitter). This peel will infuse a subtle citrus note into your cooked applesauce.

Instant Pot Directions

  • Place the prepared apple pieces, cinnamon sticks, and lemon peel into the Instant Pot. Squeeze the fresh lemon juice directly over the apples. Add ¼ cup of water.
  • Seal the Instant Pot lid and set the vent to the sealing position. Cook on high pressure for 8 minutes. Once cooked, allow the pressure to release naturally.
  • Carefully remove the lid. Discard the cinnamon sticks, apple peel, and lemon peel. Stir well. For chunky applesauce, mash any larger apple chunks with the back of a spoon. For smooth applesauce, use an immersion blender to puree until desired consistency.

Crockpot Applesauce Directions

  • Place the prepared apple pieces, cinnamon sticks, and lemon peel into your crockpot. Squeeze the fresh lemon juice directly over the apples. DO NOT ADD WATER, as the apples will release enough liquid during the slow cooking process. Set the slow cooker to high and cook for 4 hours.
  • Once cooked, remove the cinnamon sticks, apple peel, and lemon peel. Stir thoroughly. Mash any larger apple chunks with the back of a spoon for chunky applesauce. If you prefer a smooth applesauce, use an immersion blender to puree.

Stovetop directions

  • Place the prepared apple pieces, cinnamon sticks, and lemon peel into a large, heavy-bottomed pot. Squeeze the fresh lemon juice directly over the apples. Pour in ¼ cup of water.
  • Cook over medium heat for approximately 20 minutes, stirring occasionally. Continue cooking for an additional 5 minutes if the apples are not yet tender enough to mash easily.
  • Remove the cinnamon sticks, apple peel, and lemon peel. Stir well. Mash any larger apple chunks with the back of a spoon for a chunky consistency, or use an immersion blender to puree for a smooth applesauce.

To make Raw Applesauce (5-Minute Blender Method)

  • Remove the core, stem, and seeds from the apples as instructed in the “Apple Preparation” section. You do not need to peel the apples for raw applesauce, but wash them very well. Place the apple pieces into a high-speed blender. Add ½ teaspoon of ground cinnamon (instead of cinnamon sticks for this method). Squeeze the fresh lemon juice over the apples in the blender bowl.
  • Blend on high until your desired consistency is achieved. If you’re using a Vitamix or similar powerful blender, use the tamper to help process the apples. If needed, add 1-2 tablespoons of water to help the blades catch. If using a food processor, use the pulse button in short bursts to avoid over-processing and ending up with a watery mush.
  • Raw applesauce is best enjoyed immediately for the freshest flavor and texture. You can store any leftovers in an airtight container in the refrigerator for 2-3 days, though it may begin to brown slightly after 24 hours due to oxidation.
