  • Place all ingredients, except water, into your blender or food processor. Add in ½ cup water and blend until fully mixed and smooth. Scrape down the sides of the blender with a spatula and process for another minute to ensure maximum creaminess. Continue to add more water, a bit at a time, until you reach your desired consistency. You may need closer to a full cup for a pourable dressing and closer to ¾ cup for a thick dipping sauce. The exact amount of water needed will also depend on how moist your dates are and how creamy your nut butter is.
  • Store your delicious creamy vegan chipotle dressing in a glass jar with a tight-fitting lid in the refrigerator for up to 2 weeks. Please note that the dressing will naturally thicken as it chills. To restore a pourable consistency after prolonged refrigeration, simply add 1-2 tablespoons of warm water, re-seal the jar, and shake vigorously before using.
