Place all the ribbons into a medium-sized mixing bowl. It’s perfectly fine if some ribbons vary slightly in width or length – this adds to the homemade charm!
  • Drizzle the olive oil, fresh lime juice, white vinegar, and maple syrup evenly over the carrot ribbons in the bowl.
  • Peel your garlic cloves. Using a microplane, finely grate the garlic directly over the bowl of carrots. Alternatively, you can use a garlic press or finely mince the cloves by hand.
  • Slice the jalapenos into thin rounds. For less heat, make sure to discard the seeds and white membranes (pith). The more seeds and pith you leave in, the spicier your carrot salad will be. Add the prepared jalapeno slices to the bowl.
  • Roughly chop your pistachios and fresh parsley, then add them into the bowl with the other ingredients.
  • Sprinkle the sea salt and ground black pepper over everything. Use tongs or a large salad fork to thoroughly toss all the ingredients together until the carrot ribbons are fully coated with the delicious marinade and all components, especially the garlic, are evenly distributed.
